High in protein and done in under 30 minutes — this recipe is perfect for a weeknight dinner that hits all the marks. You get crispy, perfectly cooked salmon with a tasty (but not heavy) spinach orzo that feels way more indulgent than it is.

Ingredients

  • 2 salmon fillets (125g each, skinless or skin-on)

  • 100g dry orzo

  • 5g olive oil (about 1 tsp)

  • 2–3 cloves garlic, minced

  • 2 large handfuls fresh spinach (roughly 60g)

  • Juice of ½ lemon

  • 300ml water (or broth)

  • 1 tbsp heavy cream

  • 15g grated parmesan

  • Salt, pepper, and paprika to taste

Instructions

1. Season the Salmon
Pat salmon dry and season with salt, pepper, and paprika. Preheat the air fryer to 390°F (200°C).

2. Cook the Salmon
Place salmon in the air fryer basket, skin-side down if applicable. Air fry for 8–10 minutes, depending on thickness, until the surface is golden and the inside flakes easily with a fork.

3. Toast the Orzo
While the salmon cooks, heat a nonstick skillet over medium-high heat. Add olive oil and garlic. Once fragrant (about 30 seconds), add the orzo and toast lightly for 1–2 minutes.

4. Simmer
Add water to the skillet. Reduce heat to medium, cover, and simmer for 8–10 minutes, stirring occasionally, until the orzo is tender and most of the liquid is absorbed.

5. Finish the Orzo
Stir in the spinach and cook until wilted. Then add the cream, lemon juice, and parmesan. Stir until well combined and creamy. Season to taste.

6. Plate + Serve
Divide the orzo between two plates or bowls and top each with a salmon fillet. Garnish with extra lemon if desired.

Recipe Tips

  • Want it even lighter? Skip the cream and just use lemon + parmesan for a zesty finish.

  • Boost fiber? Add a side of broccoli or broccolini.

  • Not a fan of fish? Opt for chicken instead.
