High in protein, plenty of omega-3 fatty acids, and done in under 30 minutes — this recipe is perfect for a weeknight dinner that hits all the marks. You get crispy, perfectly cooked salmon with a tasty (but not heavy) orzo that feels way more indulgent than it is.

Ingredients

  • 2 salmon fillets (195g each, skinless or skin-on)

  • 112g dry orzo

  • 5g olive oil (about 3/4 tbsp)

  • 5g butter (about 3/4 tbsp)

  • 3-4 cloves garlic, minced

  • One large broccoli stalk

  • Juice of ½ lemon

  • 300ml water (or broth)

  • 1 tbsp heavy cream

  • 7.5g grated parmesan

  • Salt, pepper, garlic powder, and paprika to taste

Instructions

1. Toast the Orzo
Heat a nonstick skillet over medium heat. Add olive oil and garlic. Once fragrant (about 30 seconds), add the orzo and toast lightly for 1–2 minutes.

2. Season the Salmon
Pat salmon dry and season with salt, pepper, garlic powder, and paprika. Preheat the air fryer to 390°F (200°C).

3. Cook the Salmon
Place salmon in the air fryer basket, skin-side down if applicable. Air fry for 8–10 minutes, depending on thickness, until the surface is golden and the inside flakes easily with a fork.

4. Simmer
Add water to the skillet with orzo. Reduce heat to low, cover, and simmer for 8–10 minutes, stirring occasionally, until the orzo is tender and most of the liquid is absorbed.

5. Steam Broccoli
Add broccoli and a splash of water to the skillet with orzo, then cook for 3-4 minutes until the broccoli is fork tender.

6. Finishing Touches

Add the cream, lemon juice, and parmesan. Stir until well combined and creamy. Season to taste.

7. Plate + Serve
Divide the orzo between two plates or bowls and top each with a salmon fillet. Garnish with extra lemon if desired.

Recipe Tips

  • Want it even lighter? Skip the cream and just use lemon + parmesan for a zesty finish.

  • Not a fan of fish? Opt for chicken instead.

  • Need lower calories? Do both of the things above.
